We use whole muscle beef not chopped-and-formed, not mechanically separated meat. Whole muscle means you're getting a real piece of beef, with the natural texture, protein profile, and bite that comes with it. You can see the grain of the meat. That's how it's supposed to look.
For our Filet Mignon line, we use actual filet mignon one of the most prized and tender cuts of beef available. It's more expensive to source and harder to work with, but the result speaks for itself: a softer, richer, genuinely different jerky experience at a fair price.
The Marinade
Each flavor gets a marinade built from real, readable ingredients. No artificial flavor enhancers. No MSG added. No artificial nitrates or nitrites. Just spices, seasonings, and sauces you'd recognize from your own kitchen soy sauce, garlic, brown sugar, peppers, and more depending on the flavor.
We marinate each cut long enough to penetrate the meat not just coat the outside. That's what gives Simply Beef Jerky its depth of flavor all the way through, not just on the surface.
Slow Drying in Our USDA Facility
Our facility is USDA inspected and passed (EST.40117). The beef is slow-dried at carefully controlled temperatures to reach the moisture content that gives jerky its characteristic texture chewy, satisfying, shelf-stable without artificial preservatives.
This process takes time. We don't rush it. The drying process is what concentrates the flavor and gives Simply Beef Jerky its texture. Cutting corners here would show up in the final product, and it would show up on your palate.
Quality Checks Before Every Batch Ships
Every batch is checked before it leaves the facility. The USDA inspection requirement isn't just a certification we earned once it's an ongoing process. Our facility is subject to regular federal inspection, which means every bag that reaches you has gone through oversight that most food manufacturers simply aren't subject to.
